Ziger, also known as Zigerkäse or Schabziger, is a traditional Swiss cream cheese made from whey. Ziger isn't named after the goat, and it's not a goat's cheese either, but rather one made from skimmed cow's milk. The name comes from the Schabziger clover (bird's-foot trefoil).
